(*If you are looking for a ganache recipe that is suitable for covering with fondant, scroll to the bottom of this post for a link to our simple spreadable ganache recipe!)
This chocolate ganache recipe was adjusted from Shirley Corriher's "Shiny Ganache Coat" recipe as seen in BakeWise.
** I use this ganache glaze in my "Poured Ganache" member block video in the Chocolate Tutorials section. I adopt to frost my cake with either a spreadable ganache frosting first, or butter-based chocolate frosting like our Archetype Chocolate Buttercream recipe.
Then I become back and utilise this Poured Ganache recipe to pour (once or even twice) the ganache glaze when information technology is approximately 90-92 degrees over a slightly chilled block.
Nosotros hope that you savour the recipe!
Ingredients
- xvi oz. (454 g) semisweet chocolate, cut into pieces (I often use semisweet chocolate fries)
- 1 ½ cups (355 ml) heavy cream
- ½ cup (1.5 oz/99g) sugar
- 2 Tablespoons (30 ml) corn syrup
Instructions
Place the chocolate in a nutrient processor and finely chop.
In a large heavy saucepan, carefully bring cream and saccharide to a boil. Lookout constantly. Let simmer for 1 minute.
Pour the hot cream mixture into a medium mixing bowl that has a wide surface. Stir in the corn syrup. Let absurd about 30 seconds.
All at once, pour the chopped chocolate over the entire surface. Barely shake the basin to get the chocolate to settle. Permit to stand for 30 seconds or and then.
Outset stirring in the middle, blending the melted chocolate and foam together. Effort not to contain air. Stir slowly until the chocolate is melted and blended (at first it will be very lumpy but don't worry!) -- Use immediately or refrigerate and reheat to sparse.
I am a huge fan of all things chocolate, especially succulent ganache! Different proportions of chocolate to foam will give you a wide range of consistencies. Beneath are a couple of other options for you to endeavor out!
Can this Poured Ganache exist used beneath Fondant?
When covering cakes with fondant, I beloved to use ganache beneath. Information technology creates a nice, polish, very sturdy foundation. (I use buttercream below fondant from time to time, only ganache is my favorite option.)
However, Exercise NOT use this poured ganache recipe beneath fondant. Information technology is besides soft. Instead, check out our Simple, Spreadable Ganache recipe. This is a 2:ane ratio of chocolate to cream (or 3:1 when using white chocolate or milk chocolate) which creates a thicker ganache.) It can exist used beneath fondant, or on it's ain as with our "Carved Ganache" cake video tutorial pictured below.
